Keto Waffle No Fail Recipe


Ok so way before Keto, I have loved waffles.  I have never been a fan really of pancakes so scroll down because I am actually really digging a pancake (and it is a mix that you can do at home!)

For Waffles and pancakes, I have tried about a zillion recipes for keto ones — mostly gross.   Now I do love me a chaffle as a savory bread substitute for a sandwich but I DO NOT like any waffle (or chaffle) that is made with cream cheese.  To me, it just seems weird tasting.  Now I am not a HUGE dairy fan so take that into account if there is one that you love but I have tried a few and they are either super complicated prep (like lets get out the blender first thing in the AM with some magically softened cream cheese) or they just taste weird.

Now for recipes that do not have cream cheese, I have found a lot of them to be very heavy so I started working on my own and perfected this one.  (Anyone who has visited my recipes will see that this is a variation of my muffin recipe 🙂

 

KETO WAFFLE – MAKES ONE WAFFLE

1 and 1/2 Tbsp Almond Flour

1 Tbsp Coconut Flour

1 Tbsp Butter  – Melted (try melting it in your mixing bowl to avoid extra dishes)

1 Tbsp Erythritol (or other granulated sweetener that you like such as swerve granulated or swerve brown)

1/4 Cup Egg beaters – OR ONE WHOLE EGG BEATEN

1/2 tsp baking powder

1/4 tsp salt

 

Instructions

Heat waffle iron.   Melt butter and add all other ingredients and stir well.   Spray your waffle iron with nonstick spray on both top and bottom griddle.   Put batter on waffle iron and close.  Time varies depending on waffle iron but usually a minute or so and it should stop steaming.

PLEASE NOTE — This is for a REGULAR SIZED waffle iron.  If you have a TINY waffle iron, you may need to make 2 waffles to prevent spilling over during cooking.

Total Carbs – 7g

Net Carbs – 3g (if you use egg beaters)  If you used a real egg, it becomes 4 net g

Fat – 18g

Protein – 10 g

Calories – 223 calories

 

So this recipe also works for pancakes but seriously the BEST KETO PANCAKES are Birch Benders Keto.   BUT to make them AWESOME — use UNSWEETENED ALMOND MILK INSTEAD OF WATER.   They will be a bit gritty if you use water.    I have used their mix for waffles and it was pretty good but for pancakes (which I don’t really like any pancakes from anywhere, keto or not) the birch bender was the best.   It burns easily so be careful when you put it on your griddle but there is something about how the edges get crispy that is quite fantastic and seriously with keto, we are usually looking to recreate so having something that is actually better than the original is divine.

The birch benders mix may be cheaper if you can find it at your grocery store (like publix have it and it is cheaper but some stores, like stupid Target, have all the Birch benders but no keto. ) They also have the Birch Benders Keto sometimes at Costco.   And personally I didn’t like the birch benders syrup if you find it there too. Quite keto friendly but too watery.
