The Wonderful Powerful AVOCADO and how it can help your keto


Full Confession — I LOVE AVOCADO!!!

I am literally writing this and in an hour, I am making dinner and it is going to be keto “fajitas” with my homemade guacamole and I already know it will be awesome

Since i am strict keto, there will be NO TORTILLAS — sorry to all those people who love their sort-of keto, sort-of not tortillas but wheat and me are not friends and I follow a stricter keto so the dirty keto allowance of anything goes even if it is junk, really doesn’t work for me.   So these will be chicken with my homemade fajita sauce and veggies — I will post that soon.  I am working on a ton of recipes to get to post for people.  See below for my great recipe for fresh guac.

Avocados have TONS OF HEALTH BENEFITS

VITAMINS — Avocados are LOADED with vitamins including vitamin C, E,K and B6.

ELECTROLYTES – They are also loaded with electrolytes (where we all can sometimes struggle on keto especially in the beginning) including potassium and magnesium

SATIETY — Fancy word for KEEPING YOU FULL AND FEELING FULL LONGER!!  Important on any diet as it prevents snacking

HEALTHY FAT — They contain a healthy form of fat – and fat is great on keto but sometimes it is hard to get the right fat – this does just that.

 

For now- here is my homemade guacamole – SUPER EASY!!!

– Ripe avocados — lots.   Lol.

– Juice of 1/2 to 1 full lemon or lime or a combo — since i do about 4 or 5 avocados  for my family, I use a whole lemon

– 1 Tbsp of my homemade salsa (I make and can this during the summer when my garden is popping so it is my preferred add-in since it already has cilantro and tomato and spices.  You can use any keto friendly salsa if you like – check back soon for my recipe as spring approaches!)  Alternatively, 1/2 small tomato and 1/2 small onion super finely chopped.

– some fresh cilantro finely chopped with stems removed (judge the amount for yourself, some people like lots, others don’t like any)   I grow this all winter as it grows super well here so I just snip off a bit and give it a wash and remove the stems and chop.

Mash the avocados, add everything else and muddle it all together for avocado awesomeness!!
